One of my favorite times when I was a kid was spending the night with my paternal grandmother, Lorah Nell Green. I called her Mammy. But it was a really good night when we would make Forgotten Cookies and left them in the oven over night! I was always amazed how they would "cook" with the oven off! Now, they are favorites of my grown children!

Ingredients For mammy's forgotten cookies

    egg whites
  • 1 tsp
    vanilla
  • 1 tsp
    salt
  • 1 c
    semi-sweet chocolate chips
  • 1/4 c
    sugar

How To Make mammy's forgotten cookies

    Preheat oven to 325 degrees
  • 2
    Beat egg whites and salt until it is foamy. Slowly add the sugar a couple of tablespoons at a time, this is important. Beat after each addition until stiff peaks form.

    Stir in the vanilla and then fold in the chocolate chips.

    Drop by tablespoons on a wax paper lined cookie sheet and place the sheets in the preheated oven.

    After 2 minutes, turn the oven off. Leave the cookies in the oven overnight. In the morning, remove from the cookie sheet and store in airtight containers, lined with paper towels to absorb any moisture.
