I came up with these using whatever I had in the pantry at the time. I was having a bad day and baking is a huge stress reliever for me. My family came up with the name and they ask me to make these again and again and again!

Ingredients For luxury leftover cookies

1/2 cpacked light brown sugar

1/4 csugar

3/4 capplesauce, unsweetened

1/4 cwater

1/4 cegg substitute

1 tsppure vanilla extract

2 cold fashioned oats
-
1 cquick cooking oats

1/2 call purpose flour
-
1/2 cwhole wheat flour

1/2 tspbaking soda

1 tspsalt
-
1 tspground cinnamon
-
1/2 tspground nutmeg

1 csemi-sweet chocolate chips
-
1/2 craisins
-
1/2 cdates, chopped
-
1/2 cdried cherries, chopped

1/2 cdried blueberries
How To Make luxury leftover cookies

1Preheat oven to 350 degrees. Lightly spray baking sheets with olive oil spray.

2Beat sugars, applesauce, water, egg substitute, and vanilla until creamy. In a separate bowl, combine oats, flours, baking soda, salt and spices. Add to sugar mixture gradually, mixing well after each addition. Stir in chocolate chips and dried fruits.

3Drop dough by rounded teaspoons (I used kitchen teaspoons rather than measuring teaspoons) onto prepared cookie sheet. Bake for 10 minutes. Let stand on baking sheet for one minute before removing to wire rack to cool completely.
