Ingredients For linzer sandwich rings

3/4 cbutter or margarine, softened

1/4 tspsalt

2/3 cpacked brown sugar

2egg yolks
-
1 1/2 tspbaking powder

1 tspvanilla extract
-
1 tspfinely shredded lemon peel

2 call purpose flour
-
1 tspground cinnamon
-
1 cground walnuts
-
1/4 tspground all spice
-
confectioners sugar
-
1/4 cseedless raspberry jam
How To Make linzer sandwich rings

1In a mixing bowl, beat the butter with an electric mixer on medium-high speed for 30 seconds. Add the brown sugar, baking powder, lemon peel, cinnamon, allspice and salt. Beat until combined

2Beat in egg yolks and vanilla. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour and ground walnuts with a wooden spoon.

3Divide dough in half. Cover and chill for 1 hour or until dough is easy to handle. On a lightly floured surface, roll each half of dough to a 1/8" thickness.

4Using a cookie cutter, cut out dough. Place 1" apart on ungreased baking sheets. Using a smaller cutter, cut out the centers of half the unbaked cookies. Remove the centers and reroll dough.

5Bake cookies in a preheated oven 375* oen for 7-9 minutes or until edges are firm and bottoms are browned. Remove cookies with a spatula and cool on a rack.

6To assemble cookie sandwiches sift confectioners' sugar over the tops of the cookies with cut outs in centers. Set aside. Spread about 1/2 teaspoon of the jam onto the bottom of each cookie without cutout; top with a cutout cookie, confectioners' sugar side up
