linzer sandwich rings

These are great for the holidays. I adore using small Christmas shaped cookie cutters for the center cut out

Ingredients For linzer sandwich rings

  • 3/4 c
    butter or margarine, softened
  • 1/4 tsp
    salt
  • 2/3 c
    packed brown sugar
  • 2
    egg yolks
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    vanilla extract
  • 1 tsp
    finely shredded lemon peel
  • 2 c
    all purpose flour
  • 1 tsp
    ground cinnamon
  • 1 c
    ground walnuts
  • 1/4 tsp
    ground all spice
  • confectioners sugar
  • 1/4 c
    seedless raspberry jam

How To Make linzer sandwich rings

    In a mixing bowl, beat the butter with an electric mixer on medium-high speed for 30 seconds. Add the brown sugar, baking powder, lemon peel, cinnamon, allspice and salt. Beat until combined

    Beat in egg yolks and vanilla. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour and ground walnuts with a wooden spoon.

    Divide dough in half. Cover and chill for 1 hour or until dough is easy to handle. On a lightly floured surface, roll each half of dough to a 1/8" thickness.

    Using a cookie cutter, cut out dough. Place 1" apart on ungreased baking sheets. Using a smaller cutter, cut out the centers of half the unbaked cookies. Remove the centers and reroll dough.

    Bake cookies in a preheated oven 375* oen for 7-9 minutes or until edges are firm and bottoms are browned. Remove cookies with a spatula and cool on a rack.

    To assemble cookie sandwiches sift confectioners' sugar over the tops of the cookies with cut outs in centers. Set aside. Spread about 1/2 teaspoon of the jam onto the bottom of each cookie without cutout; top with a cutout cookie, confectioners' sugar side up
