Ingredients For lemon ricotta cookies with glaze

  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 1 stick
    butter
  • 2
    cups sugar
  • 2
    eggs
  • 1
    15 oz. container ricotta cheese
  • 3 Tbsp
    lemon juice
  • 1
    lemon zest, grated
  • FOR GLAZE:
  • 1 1/2 c
    powder sugar
  • 3
    tbsp lemon juice
  • 1
    lemon, zested

How To Make lemon ricotta cookies with glaze

    Preheat oven to 350 F.

    In a bowl combine flour,baking powder, and salt. Set aside. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time. Add ricotta cheese, lemon juice and zest. Beat to combine. Stir in dry ingredients.

    Line two baking sheets with parchment paper(make sure you do this so cookies dont get crispy or burned). Spoon dough onto cookie sheets and bake about 15 minutes. FOR GLAZE: combine1 1/2 cups powder sugar, 3 tbsp lemon juice, and zest of 1 lemon in a bowl and spread over cookies when cool. Enjoy!
