How To Make lemon passion fruit meltaways

1MELTAWAYS Preheat oven 350 degrees. Cream the butter, vanilla and powdered sugar together. Slowly alternate the flour and cornstarch incorporate it into the powdered sugar mixture. Do this about 3 times each. Place parchment paper on two cookie sheets. Using a melon scooper scoop small amounts of dough onto the prepared pans. When all the dough is on the pans push them down a bit to make them roundish. You should have about 28 rounds. Bake for 15 minutes rotate the pans at 10 minutes. Cool completely

2While the cookies are cooling make the filling. You will need 4 passion fruits. Cut each one open and scoup out the pulp. There should be about 1 tbsp in each fruit. Set aside.

3Beat the butter until fluffy. Slowly add the powdered sugar and continue to beat. Add the passion fruit and stir until well incorporated. Place in fridge to harden up a bit

4Now make the lemon icing. Beat the butter until fluffy. Slowly incorporate the powdered sugar then stir in the lemon juice and zest. Place in fridge to harden up a bit.

5When the cookies are cooled. Spread the filling on half the cookie then top with another cookie.

6Pipe or spread the lemon icing on top of each cookie. Keep the cookie in the fridge until ready to eat.
