I found the original recipe in a cookie book years and years ago, I've made some changed to fit my families taste, these are a light fuffy cookie and really, really good.

Ingredients For lemon drops

1/2 cshortening

1 csugar

2eggs
-
1 tsplemon extract

2 call purpose flour

3/4 tspsalt

1/2 tspbaking soda

1/4 clemon juice
How To Make lemon drops

1Cream shortening, sugar, eggs and lemon extract with hand mixer until light and fluffy. Sift together dry ingredients; add alternatly with lemon juice to shortening mixture.

2Drop by teaspoon onto cookie sheet. Sprinkle with sugar or decorative cystals. Bake at 375 degrees for about 8 minutes.
