If you like lemon flavored cookies, I know you will love these. Our family has been making these cookies for Christmas for many years. They take a little bit longer because they are frosted, but it is well worth the effort. You can make them in advance because they freeze beautifully. After frosting I put them into the freezer to flash freeze until the frosting is set (at least 1/2 hr). Then I put them in tupperware containers with wax paper between each layer of cookies. You can make them a few weeks before Christmas and they will be good for a couple of weeks after. That is, if there are any left!

Ingredients For lemon dainties
- COOKIE DOUGH - COMBINE:

3/4 cbutter, softened

1/2 csugar

1 tspvanilla extract

1 lgegg yolk

1/2 tsplemon extract
- THEN ADD:

1-1/2 cflour, sifted

1-1/2 ccoconut, shredded
- FROSTING:

1/4 cbutter, softened

1/8 tspsalt

2 cpowdered sugar

1-1/2 tspgrated lemon rind

4 tsplemon juice, fresh
How To Make lemon dainties

1Mix wet ingredients until combined.

2Then add dry ingredients to wet until thoroughly incorporated.

3Roll cookies into one-teaspoon-sized balls. Flatten with a fork and bake in a moderate oven at 350 degrees for 9 minutes or until the bottom is lightly browned.

4Put cookies on a rack to cool.

5Frost cookies: When cookies have cooled frost top with a moderate amount of frosting. They are ready to be eaten or frozen to be eaten later. Enjoy!
