lemon crinkle cookies
After tweaking this recipe three times I finally have come up with what I think is the perfectly lemony cookie. Not too strong. Not too sweet. Just right

1/2 cbutter

1 csugar

1/2 tspvanilla extract

2 Tbsplemon zest

1 Tbspfresh lemon juice

1/4 tspbaking powder

1/8 tspbaking soda

1-1/2 cflour

1/2 cpowdered sugar
How To Make lemon crinkle cookies

1Preheat oven 350 degrees, cover baking sheet with parchment paper

2In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again.

4Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on the baking sheet and repeat with remaining dough.

5* Bake for 12 - 15 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to a cooling rack.
