Ingredients For lemon cooler cookies

  • 1/2 c
    butter, softened
  • 3/4 c
    powdered sugar
  • 2 tsp
    lemon extract
  • 1 tsp
    vanilla extract
  • 2 c
    minus 1 tablespoon cake flour
  • 1 Tbsp
    cornstarch
  • 1/4 tsp
    baking powder
  • 1/4 tsp
    salt
  • 4 Tbsp
    milk
  • 1 c
    additional powdered sugar for dusting

How To Make lemon cooler cookies

  • 1
    cream butter, powdered sugar, milk, lemon and vanilla
  • 2
    combine flour, cornstarch, baking powder, and salt add to creamed mixture combine thoroughly.. dough will be firm but slightly sticky
  • 3
    chill dough for 1 hour or until easily worked with. dough can also be frozen for later use. for a more traditional lemon cooler look shape dough into logs and chill then cut in half length wise then slice 1/4 inch slices. I prefer to roll out the dough and use a cookie cutter.. bake at 350 for 9-12 minutes until sides are set dust with additional powdered sugar
