Ingredients For lemon cookies

1 1/4 call-purpose flour

1/2 tspbaking soda

1/2 tspcream of tartar

1/8 tspsalt

1/2 cunsalted butter, room temp

1/2 cgranulated sugar
-
1/2vanilla bean, split and scraped

1 1/2 tspfreshly grated lemon zest
-
1egg
-
sprinkles for topping
How To Make lemon cookies

1Combine dry ingredients (flour through salt) in a large bowl. In a separate bowl, mix with an electric mixer, butter, sugar, vanilla and lemon zest. Add the egg and continue mixing until combined.

2Add dry ingredients to the butter mixture and mix until just combined.

3Place the dough in a sheet of plastic wrap and form into a disc. Freeze cookie dough for 30-45 minutes or until dough is hard.

4Preheat oven to 350 degrees and line two baking sheets with parchment paper. Once the dough is hard, break off 1/2 of the dough, wrap in plastic wrap and refrigerate. Roll the first portion of the dough until thin (the dough is very buttery -- dust with enough flour to handle)

5Dip cookie cutter in flour and cut out cookies and place them on the parchment lined cookie sheets. Decorate them generously with sprinkles. Repeat with remaining dough.

6Bake 6-7 minutes or until cookies are golden. Let cookies cool completely on a wire rack.
