How To Make lemon coconut bars
-
1pre heat oven to 325. Spray 10"x15"x1" deep pan with no stick spray, I use the canola oil spray.
-
2Combine cake mix, melted butter, eggs, lemon juice and lemon zest in bowl and stir to combine. Press mixture into prepared 10"x15" pan and bake for 12 to 15 minutes in 325 oven. Do not brown it, the top should feel dry when touched. Remove from oven and cool to room temp.
-
3Once it is cooled, top with vanilla chips, sliced almonds than sprinkle coconut over the top. Now drizzle the sweened condensed milk over the top. Place back in 325 oven and bake 15 to 20 minutes, till golden brown.
-
4While the final baking is being done, make the glaze. Mix powdered sugar and lemon zest and juice together. Should be thick but runny. Using a pastry brush, spread glaze over the top of the slightly cooled bars. When completely cooled cut into desired sized bars and enjoy!
