My mother always made spritz cookies for every holliday. This recipe combinds that tradition with a modern influence of mine.

Ingredients For kitty's chocolate mints

1 cbutter, softened
-
2/3 csugar
-
1large egg
-
1 tspvanilla extract
-
2 1/4 call purpose flour
-
1/3 ccocoa, unsweetened

1/2 tspsalt
-
16 ozpackage oreo chocolate sandwich cookies—i use the mint ones

8 ozphiladelphia cream cheese, softened
-
7 ozpeppermint candies (the round red and white kind)
How To Make kitty's chocolate mints

1preheat oven to 350 deg

2Cream butter, sugar, egg and vanilla in a large mixing bowl until light and fluffy

3Add mixture of flour, cocoa and salt gradually and mix well.
Chill dough for 10 min in mixing bowl before adding to cookie press -
4Press dough through cookie press onto cool ungreased cookie sheet (I used a round pattern). Bake at 350° for 10 to 15 minutes or until set

5Remove cookies onto wire rack to cool completely
Crush or grind peppermints in food processor to a crumb and place on a plate for final garnish -
6Grind Oreos in food processor until fine and add soft cream cheese. Blend until smooth

7Spread room temperature filling on the flat side of one cookie and place another on top to form a sandwich. Press down so that filling bulges out on sides a little bit

8Roll the edges of each sandwich in crushed peppermint and allow them to firm back up in the fridge before serving
