KENTUCKY: Munch your way across the USA. Judy Dahman, the state of KY is now represented. This recipe is from "Capitol Cookies", with recipes from every state & Washington, DC. This recipe was submitted by Capital City Christian Church, Frankfort, KY, Lelia Todd, Chairperson. NOTE: This is a very stiff batter so I added in 3 to 4 tablespoons of milk and they turned out great! Very good, chewy and chocolatey.

Ingredients For kentucky's chewy chocolate cookies

1/4 cbutter, softened

2 cgranulated sugar

2 mdeggs

2 tspvanilla extract

2 call purpose flour, unsifted

3/4 ccocoa powder
-
1 tspbaking soda
-
1/2 tspsalt
-
3 Tbspmilk (may take 4)

1 cnuts, finely chopped (optional)
How To Make kentucky's chewy chocolate cookies

1Cream butter and sugar in large mixer bowl. Add in eggs, milk and vanilla and blend well.

2Combine flour, cocoa, baking soda and salt. Blend into creamed mixture; add more milk if needed. Stir in nuts.

3Drop by teaspoonfuls onto lightly sprayed cookie sheet. Bake at 350 for approximately 8-9 minutes. Do not overbake. Cookies will be soft. They will puff during baking and flatten upon cooling.

4Cool on cookie sheet until set, about one minute. Remove to wire rack to cool completely.
