A dear friend of mine shared this delicious cookie recipe with me. I feel so honored to have such a recipe to pass down to my children. They are melt in your mouth delicious! I love the ease of them also. I had them mixed up in a matter of 5 minutes. This attractive cookie would look so beautiful displayed on your tray full of Christmas goodies. You could easily double or triple the batch. Enjoy! My photos

Ingredients For italian wedding ( cookies )

1 cbutter, softned

1/2 cconfectioners' sugar
-
1 tspvanilla extract
-
2 1/4 cflour
-
1/4 tspsalt
-
3/4 cfinely chopped nuts, i used pecans - its what i had, but, can use walnuts as well

extraconfectioners' sugar for rolling
How To Make italian wedding ( cookies )

1Preheat oven to 400 degree F. ( after dough has had time to chill.)

2In a mixing bowl, cream butter and sugar until well blended.

3Next, add the vanilla.

4Sift the flour and salt together, then mix with the butter and sugar. Blend well.

5Add the nuts.

6Mix in very well. Chill dough for 30 minutes.

7After dough has chilled. Roll dough into 1 inch balls.

8Place on an ungreased cookie sheet and bake until set (not brown). About 9 - 12 minutes. ( mine took 9 min )

9While warm, roll in confectioners sugar. ( at this stage, be sure to handle with care, as they are easy to crumble. )

10Cool and roll again.
