italian "s" or sandwich cookies

My grandmother made these in shapes of "s" and also candycane shapes. They also make great sandwich cookies that we filled with raspberry jam or really any jam you like. Then we would dip them in melted chocolate, then in sprinkles of all kinds of colors and chopped nuts.

Ingredients For italian "s" or sandwich cookies

3eggs

1/2 tspalmond flavor..or more if you like

1 cplus 1 tbls. crisco shortening

2 Tbspbutter

1/4 cmilk

1 1/2 csugar

4 1/2 cflour

2 Tbspbaking powder
How To Make italian "s" or sandwich cookies

1beat eggs and almond flavor in a small bowl, melt crisco shortening and butter-cool slightly and add to egg mixture

2add milk and sugar, beat until smooth

3Mix flour and baking powder and blend together with egg mixture.

4Either roll out to form snakes to make "s" cookies or roll into logs to make sandwich cookies. Any size is good , we make ours about 1/2 to an inch round.

5bake on greased cookie sheet and bake for about 10-12 minutes until firm but not brown, cool add jam for sandwich cookies.

6Instead of buying colored sugars we just made our own with food coloring, shredded coconut is also nice to use
