I can't even remember where I learned this recipe, I have been making them every Christmas for 20 + years, and my family loves them. Using ricotta in the batter makes them so soft and almost cake-like.

    butter, softened
  • 2 c
    sugar
  • 3
    eggs
  • 2 tsp
    vanilla extract
  • 15 oz
    ricotta cheese
  • 4 c
    all-purpose flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 pkg
    vanilla frosting
  • Christmas sprinkles

  • Butter, sugar, eggs, and vanilla in a bowl.

    Preheat oven to 350 degrees F. In a large bowl, combine the butter, sugar, eggs, and vanilla.
  • Ricotta added to the bowl.

    Add ricotta and mix well.
  • Dry ingredients combined to make a dough and turned into balls of dough.

    Add the dry ingredients and mix well. Drop by the tablespoon onto a cookie sheet lined with parchment paper, or a greased cookie sheet.

    Bake for 10 minutes or so, until just barely golden on the edges.
  • Cookies on a cooling rack.

    Transfer to a cooling rack. Cool completely before frosting.
