I can't even remember where I learned this recipe, I have been making them every Christmas for 20 + years, and my family loves them. Using ricotta in the batter makes them so soft and almost cake-like.

15 ozricotta cheese

4 call-purpose flour

How To Make italian christmas sugar cookies

1Preheat oven to 350 degrees F. In a large bowl, combine the butter, sugar, eggs, and vanilla.

2Add ricotta and mix well.

3Add the dry ingredients and mix well. Drop by the tablespoon onto a cookie sheet lined with parchment paper, or a greased cookie sheet.

4Bake for 10 minutes or so, until just barely golden on the edges.

5Transfer to a cooling rack. Cool completely before frosting.

6Frost, then add sprinkles. If you have any left, store them in the fridge.
