My Mom used to put coconut in my oatmeal cookies, so I decided to play with the recipe & added some banana too! Great combination of flavors! These are best after allowing to sit 18-24 hours.

Ingredients For island kissed oatmeal cookies

1 cbutter, softened

3/4 cbrown sugar, firmly packed

1/4 csugar in the raw

1/4 csugar

2eggs
-
1/2 tspvanilla extract

1 tspcoconut extract

1 1/8 call purpose flour

1/3 ccoconut flour

1 tspbaking soda

1/2 tspcinnamon, ground

1/2 tspsalt

3 coats, uncooked (quick or old fashioned)

1/2 cpecans (chopped fine)

3/4 ccoconut, shredded

1banana (over ripe, mashed)
How To Make island kissed oatmeal cookies

1Heat oven to 350. In large bowl, beat butter and sugars on medium speed until creamy.

2Add eggs, vanilla & coconut extracts; beat well.

3Add flours, soda, cinnamon & salt; mix well
-
4Add oats, pecans & coconut. Mash banana in a small bowl, add to dough. Mix well.

5Drop by rounded tablespoonfuls onto ungreased cookie sheet.

6Bake at 350 8-10 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
