These nutty maple flavored cookies my mother use to make were request frequently at potlucks, VBS, and by the family.

Ingredients For ice box cookies

  • 1 c
    brown sugar
  • 1 c
    sugar
  • 3
    eggs, well beaten
  • 1 c
    shortening, melted
  • 4 c
    all purpose flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 2 Tbsp
    maple extract
  • 1 c
    nuts, chopped

How To Make ice box cookies

    Preheat oven to 400 degree F. Grease cookie sheet lightly.

    Beat eggs until light, add shortening. Beat well. Add maple extract, sugars and nuts. Sift flour,salt and soda together. Add to liquid little at a time. when flour is incorporated into the liquid. Roll dough into a log shape. wrap with wax paper, place in refrigerator* until dough is cold then cut into 1/4 inch cookies. Bake for 10 minutes. *My mom would freeze the logs of dough until she was ready to bake them.
