Kudos Holly! We love the flavor combination of these chocolate cranberry cookie bars. We suggest using the cinnamon graham crackers because they're the prominent flavor in the cookie, and the cinnamon is prominent. A layer of cranberry sauce is sweet and tart. Melted chocolate on top adds a little decadence. This is an easy fall dessert and would be a great way to use leftover cranberry sauce after Thanksgiving.

Ingredients For holly's chocolate cranberry cookie bars

  • COOKIE CRUST
  • 2 1/4 c
    all-purpose flour
  • 1/2 tsp
    cream of tartar
  • 1/2 tsp
    baking soda
  • 10
    whole graham crackers (we used cinnamon)
  • 1/2 c
    powdered sugar
  • 1/2 c
    granulated sugar
  • 1/2 tsp
    vanilla extract
  • 1/2 c
    vegetable oil
  • 1 stick
    butter
  • 1 lg
    egg
  • TOPPING
  • 1 can
    cranberry sauce
  • 1 c
    chocolate chips
  • 1 Tbsp
    shortening

How To Make holly's chocolate cranberry cookie bars

  • Prepare the cookie crust.

    Preheat the oven to 350 degrees F. Mix all dry ingredients well for the crust. Add wet ingredients and mix very well. Press into greased 13x9" pan.
  • Pour smooth cranberry sauce over the cookie crust.

    Run cranberry sauce through a food processor until smooth. Pour and level out over the cookie crust.
  • Bake for 20 minutes.

    Bake in 350 degree oven for about 20 minutes until the crust is done and the cranberry sauce is a little bubbly.
  • Melt chocolate chips and shortening.

    While it's baking, add chocolate chips and shortening to a heavy pot. Melt over low-medium heat, stirring constantly so as not to burn.
  • Pour chocolate over cranberry sauce and cool.

    Pour chocolate over cranberry sauce and cookie crust. Cover and let set for 4 hours or overnight.
