NEBRASKA: Munch your way across the USA. Carolyn Hoagland, the state of Nebraska is now represented. This recipe is from a book called "Capitol Cookies", which has a cookie recipe to represent every state and Washington, DC. This recipe was submitted by the University of Nebraska Office Personnel in Lincoln, NE, Sharon L. Warren, Chairperson. I personally have not tried this recipe so, Carolyn, if you try it please let us know if it makes the state of NE proud.

Ingredients For nebraska's hickory nut cookies

1/2 cgranulated sugar

1/2 cbrown sugar, firmly packed

1 stickbutter, softened

1 tspvanilla extract

1 mdegg, beaten slightly

1/2 tspsalt

1/2 tspbaking soda

1/2 tspcream of tartar

2 call purpose flour

1 c*hickory nuts, chopped
How To Make nebraska's hickory nut cookies

1Cream both sugars and butter together. Add vanilla and beaten egg and beat well. Add salt, baking soda and cream of tartar and beat well. Gradually add in flour and mix well. Add in nuts and mix well.

2Preheat oven to 350. Line cookie sheets with foil and spray with cooking spray. Drop by using a teaspoon onto prepared cookie sheet and bake at 350 for approximately 10 minutes. Cookies are done when edges show a hint of gold.

3* If you can't find hickory nuts I'm sure you can use pecans or walnuts.
