In the early '80's my Mom found a recipe for breakfast cookies in the local newspaper. Through many experiments, I tweaked the recipe to make it my own. It is a favorite of my mother-in-law's, who likes the great fiber content. A healthy carb that can also be enjoyed with yogurt of your choice.

Ingredients For hearty breakfast cookies

3/4 cbutter, softened

1/3 choney
-
1/4 cbrown sugar, firmly packed

2eggs, beaten

1 tspvanilla

2 crolled oats (long cooking oatmeal)

1/3 cwheat bran

3/4 cwhole wheat pastry flour

1/2 tspbaking soda
-
1 tspcinnamon
-
1 tspnutmeg
-
1/4 tspsalt
-
1/2 craisins or cranraisins

1 cpecans, chopped
How To Make hearty breakfast cookies

1Cream together butter, honey, brown sugar, eggs and vanilla.

2In a separate bowl combine rolled oats, wheat bran, whole wheat pastry flour, baking soda, cinnamon, nutmeg and salt. Combine with creamed mixture, mixing well. Mix in raisins and chopped pecans.

3Cover and chill for at least a 1/2 hour. Roll dough into quarter-sized balls, place on lightly greased cookie sheets and flatten slightly with a fork.

4Bake at 350 degrees in a preheated oven for 15 minutes or until lightly browned.
