I made these cookies for a friend's children, as they aren't allowed to eat candy or anything too unhealthy. The kids loved them and my friend approved! You can use canned cream cheese or sugar-free frosting, or make a homemade cream cheese frosting with reduced-fat cream cheese.

    boxed spice cake mix (18.25 oz)
  • 1 can
    pumpkin puree (not pie filling) (15 oz)
  • 2 lg
    egg whites
  • 1 c
    quick cooking oatmeal
  • 1 c
    frosting of your choice
  • festive sprinkles

  • Cookie sheet with parchment paper.

    Preheat the oven to 350 degrees F. Lightly spray a large cookie sheet with cooking spray or line with parchment paper.
  • Cake mix, pumpkin, egg whites, and oatmeal in a bowl.

    In a large bowl stir together the cake mix, pumpkin, egg whites, and oatmeal until combined.
  • Batter scooped onto baking sheet.

    Drop heaping tablespoonfuls of batter onto the prepared pan.
  • Pumpkin cookies cooling on a wire rack.

    Bake cookies for 8-10 minutes or until slightly firm yet cake like when gently pressed. Cool on wire racks.
  • Frosting the cooled cookies.
