Ingredients For happynut date coconut balls

  • 3/4 c
    flaked coconut
  • 1/2 c
    real butter
  • 1 pkg
    (8 ounces) chopped dates
  • 3/4 c
    chopped walnuts
  • 2 lg
    eggs
  • 3/4 c
    trivia fine sugar
  • 3 1/2 c
    crispy rice cereal(or any extra crispy wheat puffs,any kind rice cereal no mane works great too.

How To Make happynut date coconut balls

  • 1
    PREHEAT oven to 350 * BAKE coconut,stirring occasionally, 5 to 6 minutes or until toasted. SET ASIDE
  • 2
    MELT butter in large skillet over low heat. ADD your dates and nuts;cook over low heat,stirring constantly until dates are softened. COOL to touch (about 5 minutes.)

    BEAT eggs and trivia.Granulated sweetener for 3 minutes at medium speed with an electric mixer;ADD to date mixture. COOK low-heat ,stirring constantly ,until mixture thickens (about 3 minutes.) STIR in the rice cereal .COOL to touch.SHAPE into 1- inch balls. ROLL in the toasted coconut. Enjoy it and share with someone else.PUT a smile on some face.?????
