THIS WAS ONE OF THE COOKIES I HAD MADE FOR THE CHRISTMAS TRAYS FOR FAMILY AND FRIENDS FOR MANY MANY YEARS. THIS IS A DELICATE COOKIE, MELT IN YOUR MOUTH IN ONE BITE. A VERY NICE ALMOND TASTE TO THEM. A NICE COOKIE FOR A COOKIE-SWAP. THIS RECIPE WAS HANDED DOWN TO ME BY AN OLDER LADY IN THE EARLY '70'S.

Ingredients For carols greek cookie balls

  • 2 c
    butter/margarine, soft
  • 3/4 c
    confectioners' sugar
  • 1
    egg yolk
  • 1 1/2 tsp
    almond extract
  • 4 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 c
    almonds, slivered - finely chopped - [ i do mine in a mini food processor]
  • extra confectioners sugar- [for dusting]

    I USE A KITCHEN-AID MIXER FOR THESE.

    PREHEAT OVEN TO 350 DEGREES.

    MIX BUTTER AND CONF. SUGAR UNTIL FLUFFY.

    THEN BEAT IN EGG YOLK AND EXTRACT UNTIL SMOOTH.

    IN A SEPARATE BOWL; WHISK THE FLOUR, BAKING POWDER AND ALMONDS TOGETHER.

    ADD THE DRY INGREDIENTS A THIRD AT A TIME TO THE BUTTER MIXTURE AND MIX FOR A COUPLE MINUTES.

    CHILL FOR 1 HOUR.

    SHAPE INTO 1 INCH BALLS - [APPROX. 1 TBSP.] - [DO NOT FLATTEN]

    PUT ON AN UN-GREASED COOKIE SHEET 2 INCHES APART.

    BAKE APPROX. 15 MINUTES - [LIGHT SAND COLOR]

    WHEN DONE MOVE TO WAX PAPER-- SPRINKLE WITH CONF. SUGAR WHILE STILL WARM.

    NOTE: THIS IS A DELICATE COOKIE, SO DON'T SQUEEZE THEM. MAKES A NICE COOKIE FOR A COOKIE SWAP; BUT YOU WILL PROBABLY HAVE TO DOUBLE THE RECIPE. I DID WHEN I MADE MY CHRISTMAS TRAYS.
