great-grandmom mae’s italian biscotti

This recipe was passed down from my father-in-law’s mother, Grandmom Mae Conforti. My husband John has made them and they were so good! This was written down as she said (1 juice glass of…) so use your best guess as to the amount! LOL!

Ingredients For great-grandmom mae’s italian biscotti

2 1/2 lbflour (12 cups)

8eggs
-
3 Tbspbaking powder

1 tsporange flavoring

1 Tbspvanilla extract
-
1/2 tspsalt
-
1juice glass of orange juice (or more if necessary)

1 1/4 lbsugar (5 cups)
-
rind of 2 oranges, grated
-
1/2juice glass mazola oil (or crisco oil, etc.)

1 1/2 tspalmond flavoring
-
sliced almonds (optional)
-
1egg, beaten with a fork, for glaze
How To Make great-grandmom mae’s italian biscotti

1Sift flour, baking powder & salt in a large bowl. Set aside.

2Beat 8 eggs for about 4 minutes. Add sugar a little at a time. Continue beating with an electric mixer at medium speed.

3Add all extracts/flavorings with grated orange rind & mix with a wooden spoon.

4Add to flour mixture a little at a time until about 3/4 used up.

5Add oil to the batter, mix, add remaining egg mixture, orange juice & almonds.

6Mix with wooden spoon till no dry flour is left. Remove a small amount (equivalent to about 1 1/2 cups) & Place on a well floured board.

7Roll slightly, and stretch & flatten with your hands until about 1/2 inch thick.

8Place on well greased cookie sheet (greased with Crisco). Brush lightly with beaten egg.

9Preheat oven to 350F. Place on lower shelf of oven till slightly golden, then shift to upper shelf. Let bake till light brown.

10Remove from oven & slice diagonally. Put back on cookie sheet cut side down. Place back in oven for 2-3 minutes more. Remove from oven.

11Keep replacing until all batter is used. (Have 2 cookie sheets)

12Cookies should be about 2 inches wide & 12 inches long.
