Even if rhubarb season is over, but you happened to freeze some, this recipe is worth using it in! It came from my Grandma Mickey, ranch cook extraordinaire!

Ingredients For grandma's rhubarb bars
- CRUST

1 cbutter, room temperature

2 cflour
-
2 Tbspsugar
- FILLING

6egg yolks

1/2 tspsalt

2 csugar

4 Tbspflour

1 cheavy cream
-
1 tspvanilla

5 crhubarb, chopped
- TOPPING

6egg whites
-
dash salt
-
1/2 tspcream of tartar

3/4 csugar

1 tspvanilla
How To Make grandma's rhubarb bars

1Preheat oven to 350*. Have ready a 9 x 13 inch pan.

2For Crust: Mix sugar and flour. Cut in butter, until mixture is crumbly. (a food processor works well here) Pat into pan. Bake 10 minutes.

3While crust is baking, prepare the filling: Beat egg yolks, salt, sugar, flour, cream, and vanilla. Add rhubarb. Pour over crust. Bake 25 minutes. Lower oven temp. to 300*, bake 20 minutes more. Remove from oven.

4Raise oven temp. back to 350*

5While your bars are baking, prepare the topping: Beat ingredients intil stiff peaks form. Spread over hot filling. Bake for 15 minutes, or until meringue is nicely browned.

6Cool and cut into bars.
