This comes from a special friend who was our neighbor, when we lived in FL, with the first four of our six children; Grandma Zemke, widowed, had no grandchildren so, "adopted" ours. She was the chief cook of an exclusive camp, every summer in the Bahamas for a wealthy family. She helped me to revise the recipe to make in a 9 x 13 baking dish instead of 8". It is delicate and not overwhelmingly sweet. I celebrate my memory of Grandma Zemke.

Ingredients For grandma zemke's lemon bar cookies
- BOTTOM CRUST

2 call purpose flour (can use gluten free flour with 1/2 tsp xanthan gum)

1/2 cpowdered sugar
- FILLING

4eggs, beaten

2 csugar

6 Tbsplemon juice

1 tspbaking powder

1/2 cflour
How To Make grandma zemke's lemon bar cookies

1Combine crust ingredients; Press into 9 x 13 x 2" baking pan Bake at 350 degrees for 20 minutes.

2While crust is baking, mix filling ingredients; Pour mixture over crust and bake 20 minutes more or until light golden brown.

3Sprinkle with powdered sugar; Cut into squares or bars.
