We always make these with prunes, as they are my husband's favorite Christmas cookies. He says they taste EXACTLY like his Grandma's. Now, THAT'S a compliment!

Ingredients For grandma frobel's date-filled cookies

1/2 csoft shortening

1 csugar

2eggs
-
2 1/2 cflour

1/4 tspbaking soda

1/2 tspsalt

2 Tbspheavy cream

1 tspvanilla

2 1/2 cdates or prunes, pitted and finely chopped

3/4 csugar

3/4 cwater
-
3 tsplemon juice

1 tspbutter
How To Make grandma frobel's date-filled cookies

1For the dough: Mix thoroughly the shortening, 1 cup sugar, and eggs.

2Stir in cream and vanilla.

3Sift together and blend in the flour, baking soda and salt. Chill dough for about 1 hour.

4For the filling: In a heavy saucepan, mix together dates or prunes, 3/4 cup sugar, water, lemon juice, and butter.

5Cook slowly, stirring constantly until thickened. Cool to room temperature.

6Roll out the dough very thin on a lightly floured surface. Cut into 3-inch rounds with a cookie cutter or glass.

7Place on a lightly greased cookie sheet. Place a rounded teaspoon of filling in the center. Fold over like a turnover and pinch edges shut.

8Bake at 400F until delicately browned (around the edges). About 8-10 minutes. Cool on wire racks.
