ham n goody’s lemon cookies
This is a take off on the famous Ham n Goody’s lemon tea cookies from their bakery and sandwich shop in Knoxville Tennessee. I make a couple of changes to add even more lemon flavor and use palm sugar to reduce the impact of the glycemic load. Make no mistake they are still sweet and extremely lemony, kinda like eating a refreshing glass of lemonade.

Ingredients For ham n goody’s lemon cookies
- COOKIES

3 call purpose flour

1/2 tspbaking soda

1 tspbaking powder
-
1 cbutter, unsalted, softened

1 cwhite or palm sugar, your choice

2 lgjuiced lemons, use pulp and grated peel
- GLAZE

1 1/4 cconfectioners sugar

1 lgjuiced lemon, with pulp and grated peel
How To Make ham n goody’s lemon cookies

1Sift flour, baking powder and baking soda into bowl. Beat butter, sugar, lemon juice, lemon, pulp, and grated lemon peel, add dry ingredients And mix until combined.

2Roll into 2 10 inch logs and wrap in plastic wrap, freeze for at least 1 hour. (You can make ahead and freeze for weeks until needed).

3Preheat oven to 400 degrees. Remove dough from freezer, unwrap and cut into 1/4 inch thicknesses

4Place on silicone baking mat and place in oven for 7-9 min

5Remove and let cool on rack.

6Mix powdered sugar, lemon juice, pulp and grated peel, pour into shallow bowl or plate.

7After cookies have cooled, invert one at a time and dip into glaze, set aside to set. ENJOY!!!!!
