This cookie is gluten & grain free. They taste like a regular wheat based cookie .. not gritty like the ones made with rice flour. And not too sweet .. just right!

Ingredients For gluten/grain free chocolate chip cookie

3 Tbspunsalted butter, softened

1/2 cpacked lt brown sugar

1/4 cgranualted sugar (i used coconut sugar)

2 Tbspoil .. veggie or coconut

1 egglightly beaten
-
1/2 ccoconut flour
-
1/2 calmond flour
-
1 tspxanthan gum
-
1/2 tspbaking soda
-
1/4 tspsalt
-
1/3 cchocolate chips .. (whatever chips you like)

1/4 cchopped walnuts .. or any other nut (optional)
How To Make gluten/grain free chocolate chip cookie

1Preheat oven to 350 .. Line a baking sheet with parchment paper. In a lg bowl, mash the butter & sugars with a fork until combined....

2In a small bowl, whisk the egg & oil til creamy, stir in the vanilla...

3In a medium bowl whisk the flours, baking soda and salt...

4Add the flour mixture to the butter mixture, mix well (all I used was a fork .. and it worked fine)

5Gently fold in the chocolate chips & nuts. Drop rounded tablespoons on to cookie sheet .. you could flatten out a bit .. I didn't .. and mine came out pretty hardy & chewy ..

6Bake for 8-10 mins, depending on your oven .. ENJOY!
