These are awesome, thick, soft, and chewy gluten-free cookies and could pass off without anyone knowing.

If you can't have gluten and enjoy chocolate chip cookies, you'll enjoy this recipe. They're crispy outside and chewy in the middle. Buttery and sweet, no one will guess they're gluten-free. In fact, they taste better than some traditional chocolate chip cookie recipes we've tried.

Ingredients For gluten-free chocolate chip cookies

  • 2 1/2 c
    Gluten-free all-purpose flour with xanthan gum
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1 pkg
    sugar-free white chocolate instant pudding (3.3 oz)
  • 1/2 c
    butter, room temp
  • 1/2 c
    shortening
  • 1 1/2 c
    brown sugar, firmly packed
  • 2 tsp
    gluten-free vanilla extract
  • 2 lg
    eggs
  • 12 oz
    chocolate chips
  • 1 c
    chopped nuts (optional)

How To Make gluten-free chocolate chip cookies

  • Dry ingredients in a bowl.

    Preheat oven to 375 degrees. Mix all dry ingredients and set aside.
  • Creaming butter and shortening.

    Beat butter and shortening until creamy.
  • Brown sugar and vanilla added to the butter.

    Add brown sugar and vanilla. Mix until well blended.
  • Slowly adding eggs.

    Beat in eggs, one at a time.
  • Slowly adding flour.

    Slowly add flour mixture.
  • Stirring in chocolate chips and nuts.

    With a spoon, stir in chocolate chips and nuts.
  • Batter dropped onto a cookie sheet.

    Drop the batter into 2 Tbsp portions, 2 inches apart on an ungreased cookie sheet.
  • Baked chocolate chip cookies baking.

    Bake until edges are browned and about 1” area in the center of the cookie is still pale approximately 10 minutes.
