This recipe is my very favorite cookie recipe! The cookies are light and delicate and very delicious! Perfect for a bridal luncheon or women's group meeting. We have them on special occasions.

1 1/2 tspbaking powder

1/4 tspsoda

1/4 tspsalt

3/4 ccrushed pineapple/drained reserve juice

1/2 cshortening/butter

1 cbrown sugar, lightly packed

1 tsppure vanilla extract
- GLAZE TOPPING

1 cconfectioners' sugar

2 -3 Tbspreserved pineapple syrup

2 Tbspcream cheese

1 Tbspbutter
How To Make pineapple cookies with cream cheese glaze

1Drain pineapple, reserving some syrup for the glaze. Cream shortening and sugar, add egg blend well. Mix in pineapple and gradually add dry ingredients, and vanilla.

2Drop by teaspoonfuls on cookie sheet (spray lightly with no-stick spray) Bake at 325 degrees for 10 - 15 minutes (depending on size of cookies)

3Mix 1 cup of confectioners sugar, the cream cheese, butter and enough reserved pineapple juice to make a soft glaze/frosting. Lightly frost cookies and let dry before stacking.
