My mom gave this recipe to me, handwritten. I had forgotten about having it. But I found it today when looking through recipes. I remember her making them in the winter, but they can be made anytime!

What a fantastic old-fashioned recipe. Moist, tender and packed with different flavors and textures, we adored these cookies. Pecans add a nice crunch. Raisins give the cookie a bit of chew. The perfect balance of spices goes really well with the bites of apple. A sweet, thick glaze on top is the perfect touch. These cookies will be delicious on any dessert tray.

Ingredients For glazed fresh apple cookies

  • 1 1/2 c
    hot water
  • 1 c
    raisins
  • shortening, for greasing pans
  • 1/2 c
    real butter or vegetable shortening
  • 1 1/3 c
    light brown sugar, packed
  • 1
    egg
  • 2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1 c
    tart apple, unpared, finely chopped
  • 1 c
    chopped pecans or walnuts
  • 1/4 c
    apple juice or milk
  • GLAZE
  • 1 1/2 c
    powdered sugar, sifted
  • 1 Tbsp
    real butter, softened
  • 1/4 tsp
    vanilla extract
  • 1/8 tsp
    salt (omit, if butter is salted)
  • 2 1/2 Tbsp
    light cream or milk
  • colored sugar crystals or decorations, if desired for holidays

How To Make glazed fresh apple cookies

    Preheat oven to 350°F. Grease cookie sheets.
  • Raisins soaking in hot water.

    Soak raisins in hot water, until ready to use; then drain.
  • Creaming butter and sugar.

    Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
  • Adding an egg to butter/sugar mixture.

    Add egg, and mix well.
  • Whisking together dry ingredients.

    Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Adding dry ingredients to wet ingredients.

    Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
  • Folding in apples, nuts, and raisins.

    Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
  • Dropping batter onto a baking sheet.

    Drop by teaspoonfuls onto greased cookie sheets.
  • Baking cookies in the oven.

    Bake for 10 to 15 minutes or until done. Makes 5-6 dozen.
  • Combining powdered sugar and other ingredients for glaze.

    GLAZE: Mix together sifted powdered sugar and all other ingredients.
  • Spreading glaze onto cookies.

    Spread on cookies, while still hot. Sprinkle with colored sugar crystals or other decorations, if desired for the holidays.
