i remember my friend mary's mother making these when we were little we be gone on our bikes all day and come back to her house to these great cookies

Ingredients For ginger snap cookies and lime sandwiches

3/4 cbutter

1 csugar

1/4 cmolasses

1egg
-
2 tspbaking soda

2 cflour

1/2 tspclove, ground

2 cancinnamon

1/2 tspsalt

4 ozcrystallized ginger, cut up
- FOR THE FILLING:

1/2 cbutter

1/4 cshortening
-
2 cpowdered sugar

zest of lime

1 tsplime juice

2 tspmilk as needed
How To Make ginger snap cookies and lime sandwiches

1mix butter, sugar, molasses and egg. add in dry ingredients and mix well. let sit in fridge for at least 1 hour.

2use cookie scoop to measure out 1 inch balls, roll in sugar and place on cooking sheet lined with parchment paper.

3bake at 375 for 8-10 minutes.

4they will puff up during baking but deflate as they cool.

5the cookies get crunchy on the outside but stay soft on the inside.

6for the filling: combine ingredients and mix well.

7use as much lime flavor for your preference.

8add buttercream to one cookie and make a sandwich.
