I have yet to find one person who doesn't fall in love with these cookies! The cooked brown sugar frosting is the perfect topping for a pumpkin cookie. I usually double the recipe because they go so fast and everyone wants them! These have been passed down in our family and are easy yet delectable. Hope you all enjoy them.

Ingredients For frosted pumpkin cookies

2 cflour

1 tspbaking powder

1 tspbaking soda

1 tspcinnamon

1/2 tspsalt

1 cshortening
-
1 csugar

1 ccanned pumpkin

1egg
-
1 tspvanilla

1 cchopped dates or raisins (optional)
- BROWN SUGAR FROSTING

3/4 cbrown sugar
-
3 Tbspbutter
-
4 Tbspmilk or cream
-
1 cpowdered sugar

3/4 tspvanilla
How To Make frosted pumpkin cookies

1For the cookies, sift all dry ingredients together and set aside.

2Cream shortening and sugar together till fluffy. Add pumpkin and eggs and beat. Add dates or raisins if desired.

3Add all dry ingredients to the shortening mixture and stir well. Drop by rounded spoonfuls onto an ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes. Cool before frosting.

4For the brown sugar frosting. Mix the brown sugar, butter and milk together in a heavy saucepan and boil for 2 minutes.

5Remove from heat and stir in the powdered sugar and the vanilla. Beat well. If frosting hardens while you work,place over low heat for a short time to soften while continuously stirring.
