frosted nickerdoodles
The mechanics at work were getting bored with my basic chocolate chip cookies I’d bring in to them (ungrateful, I know!). So one wanted snickerdoodles and one wanted frosted sugar cookies so I made a compromise. These taste like the middle part of a cinnamon roll!

Ingredients For frosted nickerdoodles

1 cbutter, softened

1 1/2 csugar

2 lgeggs

2 tspvanilla extract

1 1/2 tspcream of tartar

1 tspbaking soda

1/2 tspsalt

2 3/4 cflour
-
1 Tbspsugar

2 tspcinnamon

1-8 ozcream cheese, room temperature

1/2 cbutter, softened

1 pinchsalt
-
1 tspvanilla extract

3 cpowdered sugar
How To Make frosted nickerdoodles

1Preheat oven to 350 *optional turn on some good music and grab a cocktail

2Set eggs in a dish of warm water to get to room temp

3Soften butter in microwave
-
4Cream butter and 1 1/2 cups sugar in mixer

5Add eggs and vanilla. Scrape down the bowl.

6Add cream of tartar, salt, and soda

7Add flour and mix just until incorporated

8spray a 9 x 13” pan with cooking spray and press dough into pan

9Combine 1 T sugar and 2 t cinnamon then sprinkle over the top

10Bake 22-26 minutes. Don’t over bake!

11This recipe makes a lot of frosting which my boys love! Feel free to not use all or half the recipe. While bars are cooling start the frosting by softening one stick (1/2 cup) butter then soften 8 oz cream cheese

12Mix butter and cream cheese then add pinch of salt and vanilla

13Add 3 cups powdered sugar and mix well. I spread it on my bars while they were still warm to make it easier. Then refrigerate until frosting is set.
