frosted nickerdoodles

The mechanics at work were getting bored with my basic chocolate chip cookies I’d bring in to them (ungrateful, I know!). So one wanted snickerdoodles and one wanted frosted sugar cookies so I made a compromise. These taste like the middle part of a cinnamon roll!

Ingredients For frosted nickerdoodles

  • 1 c
    butter, softened
  • 1 1/2 c
    sugar
  • 2 lg
    eggs
  • 2 tsp
    vanilla extract
  • 1 1/2 tsp
    cream of tartar
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 3/4 c
    flour
  • 1 Tbsp
    sugar
  • 2 tsp
    cinnamon
  • 1-8 oz
    cream cheese, room temperature
  • 1/2 c
    butter, softened
  • 1 pinch
    salt
  • 1 tsp
    vanilla extract
  • 3 c
    powdered sugar

How To Make frosted nickerdoodles

  • Preheat oven

    Preheat oven to 350 *optional turn on some good music and grab a cocktail
  • Bring eggs to room temp

    Set eggs in a dish of warm water to get to room temp
  • 3
    Soften butter in microwave
  • Add sugar to butter

    Cream butter and 1 1/2 cups sugar in mixer
  • Add eggs

    Add eggs and vanilla. Scrape down the bowl.

    Add cream of tartar, salt, and soda
  • 7
    Add flour and mix just until incorporated

    spray a 9 x 13” pan with cooking spray and press dough into pan

    Combine 1 T sugar and 2 t cinnamon then sprinkle over the top

    Bake 22-26 minutes. Don’t over bake!

    This recipe makes a lot of frosting which my boys love! Feel free to not use all or half the recipe. While bars are cooling start the frosting by softening one stick (1/2 cup) butter then soften 8 oz cream cheese

    Mix butter and cream cheese then add pinch of salt and vanilla
  • 13
    Add 3 cups powdered sugar and mix well. I spread it on my bars while they were still warm to make it easier. Then refrigerate until frosting is set.
