I discovered this recipe in 1980, the same year that Pop started growing his beard. I remember making them for the first time when this major change came to my sweetheart. The recipe is on page 105 of the 1980 Southern Living Cookbook. It's one of Pop's favorite cookies!

Ingredients For easy oatmeal cookies

1 1/4 csifted all-purpose flour

1 tspbaking soda

1/2 tspsalt

1/2 tspcinnamon

1 csolid crisco

1 cbrown sugar, firmly packed

1 cgranulated sugar

2eggs
-
1/2 tspvanilla extract

3 cquick-cooking oats
-
1/2 cchopped pecans
How To Make easy oatmeal cookies

1Sift together flour, soda, salt, and cinnamon. Set aside.

2Cream Crisco, both sugars, eggs, and vanilla.

3Add flour mixture to shortening mixture and mix well.

4Add oats, then pecans.

5Roll into small balls (about the size of a walnut) and place 1 inch apart on ungreased cookie sheet. Bake at 350 for 12 to 15 minutes. Cool on wire racks.
