I really needed to find something sweet that wouldn't affect my blood sugar level. YUM! These cookies fit the bill. Only 6 g. carbs, 45 calories, 5 g total fat - it will be even less if you use the Splenda!

1/2 cbrown sugar, light - can use splenda brown sugar blend

1/2 tspbaking soda

1/4 cpeanuts, chopped

1Preheat oven to 350'

2In a large bowl, combine all ingredients.

3Place dough by teaspoonfuls on a non-stick baking sheet, and press down with a fork to form ridges.

4Bake for 12 minutes until just lightly browned.
