These are a chewy chocolate and minty Holiday favorite. After many years of trying to come up with a chewy chocolate cookie I came up with these. The addition of instant pudding mix to the batter not only adds the chocolate but the chewiness of the cookie.

Ingredients For double mint chocolate chip cookies

1 cmargarine (imperial or parkay), softened

3/4 cgranulated sugar

3/4 clight brown sugar

2eggs

1 tsppure vanilla extract (or peppermint if you use regular chocolate pudding)

2 1/4 cflour

1/2 tspsalt

1 tspbaking soda

1 pkginstant chocolate mint pudding mix, (if you can't find chocolate mint use chocolate)

1 pkggreen mint chips
How To Make double mint chocolate chip cookies

1Cream together margarine, sugars, eggs and extract. Add 1 1/2 cups flour, pudding mix, salt, and baking soda; stir well. Then add the last 3/4 cups flour, stir until combined and add mint chips.

2Bake at 375 degrees for 9-11 minutes. Cool on baking sheet for 2 minutes; remove to wire rack to cool completely.
