My moms recipe.I remember my mom making these when I was a kid, they took a long time to make but are worth every minute of it.

Ingredients For date pinwheel swirl cookies

  • 1 c
    chopped pitted dates
  • 1/2 c
    water
  • 1/2 c
    sugar
  • 1/2 c
    chopped nuts
  • 1 c
    brown sugar
  • 1/2 c
    shortening
  • 2
    eggs well beaten
  • 2 c
    all purpose flour
  • 1/4 tsp
    salt
  • 1/4 tsp
    baking soda

    Combine dates, water, white sugar, and chopped nuts cook them until thick on a low heat.

    In a separate bowl Cream the shortening, then brown sugar, gradually add the eggs.

    Shift the flour, soda, salt then add to other ingradients.

    Chill thoroughly then roll dough out to about 1/4 inch thick. Spread the filling roll into a jelly roll shape. chill overnight. cut into think slices bake at 400 degrees for 10 minutes.
