I have already posted a cookie recipe with cranberry/orange, but these are oatmeal, instead of regular type cookie. These also use dried cranberries & cinnamon.

Ingredients For cranberry orange oatmeal cookies

1 cbutter, softened

1 cpacked brown sugar

1/2 cwhite sugar

2 lgeggs

1 1/2 tspvanilla extract

1 Tbspgrated orange zest

1 tsporange extract

1 1/2 call-purpose flour or unbleached all-purpose flour

1 tspbaking soda
-
1 tspground cinnamon
-
3 crolled oats
-
1 cdried cranberries
How To Make cranberry orange oatmeal cookies

1Preheat oven to 350°F.

2In a large bowl, cream together butter and sugars, until smooth. Beat in the eggs, one at a time, then stir in vanilla, orange zest and orange extract.

3Combine flour and next 2 items; stir, into butter mixture. Stir in oats and dried cranberries. Drop by rounded tablespoonsful, onto ungreased cookie sheets. (Parchment paper works good.)

4Bake 10-12 minutes, in preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 2 minutes, before removing to a wire rack to cool completely. Makes 48 servings (4 dozen).
