VIRGINIA: Munch your way across the USA. Teresa Brobst, the state of Virginia is now represented. This recipe is from " Capitol Cookies" with recipes from every state capital & Washington, DC. This recipe was submitted by St. Matthews UMW, Manakin Sabot, Virginia, Debbie Minix, Chairperson. I personally have not made these so, Teresa, if you make these, let us know if they make your state proud.

Ingredients For virginia's cranberry crunch bars

  • 7/8 c
    all purpose flour= (1 cup minus 2 tablespoons)
  • 1/2 tsp
    salt
  • 3/4 tsp
    cinnamon
  • 3/4 c
    brown sugar
  • 1 c
    quick oats
  • 1/2 c
    butter
  • 1/2 c
    walnuts, finely chopped
  • 1/2 c
    granulated sugar
  • 1 Tbsp
    cornstarch
  • 14 oz
    jar cranberry-orange relish

How To Make virginia's cranberry crunch bars

    Preheat oven to 400. Lightly grease 8" square pan. Sift flour, salt and cinnamon into bowl. Stir in brown sugar & oats. Cut in butter until mixture is crumbly. Add nuts. Press 1/2 of mixture evenly over bottom of pan. Bake at 400 for 5 minutes. Cool on wire rack.

    Mix granulated sugar, cornstarch and relish in saucepan. Cook slowly, stirring constantly, until mixture thickens and boils 3 minutes.

    Pour mixture over oats mixture in square pan & top evenly with remaining 1/2 oats mixture. Bake at 400 for 30 minutes or until golden brown.
