My grandkids love these cookies!This is a very large cookie but could be made smaller if you want. Sometimes I put vanilla ice cream between them and I drizzle some dipping chocolate over them wrap in wax paper and freeze. These are the most asked for cookie at my house.

Ingredients For cowboy cookies

3 stickbutter

1 1/2 csugar

1 1/2 cbrown sugar

3eggs
-
1 Tbspvanilla extract

3 cflour
-
1 Tbspbaking powder

1 Tbspbaking soda

1 tspsalt

1 Tbspcinnamon

3 cchocolate chips

3 coats

2 ccoconut (optional)

2 cpecans, chopped
How To Make cowboy cookies

1Cream butter and sugars

2Add eggs and vanilla, beat well

3Add dry ingredients until blended.

4Stir in remaining ingredients.

5Use ice cream scoop or 1/4 cup scoops of dough and put on cookie sheet 3" apart. Slightly flatten with your hands.

6Bake at 350F for 10-12 minutes. Let sit for one minute before removing from cookie sheet. I let them cool on paper before bagging them in 1 gallon zip lock bags and freeze.
