cowboy cookies (monster cookies)
(2 ratings)
I so love these cookies... They are my family's favorite. This recipe came from a cookbook that I have; but I "doctored" it up adding ingredients that I like. You can basically use whatever ingredients that you have on hand, ex: m & m's, butterscotch, white or regular chocolate chips, peanut butter chips etc. different kinds of nuts anything.... Chopped up candy bars, raisins etc... whatever it all works...use what you have. :)

How To Make cowboy cookies (monster cookies)
-
1Place butter & both sugars in large bowl, mix well with electric mixer. Add eggs, vanilla, peanut butter & salt mix well.
-
2In another large bowl whisk the baking power & soda into the flour. Add the remaining ingredients to flour mixing well.
-
3Add, dry ingredients to wet (I do this all at once cause I don't want to over work the gluten in the flour (but the recipe said to mix a little at a time.
-
4Spray your baking sheet with cooking spray, and scoop out the dough (I use a cookie scoop). Press lightly down with slightly wet hands to make a slighty flatten cookie. Bake at 350 for 8-11 minutes or until golden brown. Cool for a couple of minutes then put on a rack or waxed paper to cool. Enjoy.
