I got this recipe from my step-wife (my kids step-mom) and it has been a favorite for years. I don't know where the name Cowboy Cookies came from, but that's the name I've always passed along with the recipe.

Ingredients For cowboy cookies

1 cshortening

1 cbrown sugar, firmly packed

1 csugar

2eggs
-
1 tspvanilla

1 tspsoda

1 tspbaking powder

2 call purpose flour

1 cchocolate chips

2 cold fashioned oats

1/2 cchopped walnuts
How To Make cowboy cookies

1Cream shortening, brown sugar and sugar together.

2Add eggs and vanilla, blend well.

3Sift soda, baking powder and flour together and add to mixture.

4Add chocolate chips, oats and nuts. Mix well.

5Dough will be thick and crumbly. Drop by teaspoonfuls on ungreased cookie sheet.

6Bake 10-12 minutes at 350º or until golden brown.
