An old cookie recipe, but good! The grocery store at one time made them, but I have not seen them is about ten years now.

Ingredients For cowboy cookies

1 cshortening
-
1 1/2 cbrown sugar, firmly packed

1/2 cwhite sugar

2eggs
-
1 1/2 tspvanilla

2 cflour
-
1 tspbaking soda
-
1/2 tspsalt
-
2 cquick cooking oatmeal

2 cchocolate chips
-
1 ccoconut
How To Make cowboy cookies

1Cream together shortening, brown sugar and white sugar. Add eggs and vanilla.

2Combine flour, baking soda and salt. Add to egg mixture.

3Stir in oatmeal, chocolate chips and coconut.

4Drop by spoon or cookie scoop onto cookie sheet. (I always bake cookies with parchment paper)

5Bake at 350 degrees for 10-12 minutes. Let set before moving to a cooling rack.
