This is based on Laura Bush's favorite cooky recipe. It made a giant batch of large cookies, so I modified it a bit. I like to use a cookie scoop instead of teaspoons to keep the size even.

1 cflour

1 tspbaking powder

1 tspbaking soda

1/4 tspsalt

1/2 cbutter, room temperature (1 stick)

1/2 cgranulated sugar

1/2 clight brown sugar

1egg

1 tspvanilla

1 cchocolate chips

1 cold-fashioned rolled oats

3/4 cflaked coconut

3/4 cchopped pecans
How To Make cowboy cookies

1Heat oven to 350ºF. Mix flour, baking powder, baking soda, cinnamon and salt in bowl.

2In large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, combining thoroughly.

3Beat in egg and vanilla.

4Gradually add flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.

5Drop teaspoons of dough onto ungreased baking sheets. Bake for 12 to 15 minutes, until edges are lightly browned; rotate sheets halfway through. Let cookies cool on rack.
