I like these cookies with my coffee for breakfast,or an afternoon pick-up. There yummy like a granola bar.and there even good for you.

1/2 cbrown rice flour

1/4 cwhite rice flour

!/3 cpotato starch (not flour)

3 Tbsptapioca flour

2 Tbspcoconut flour

1 tspguar gum ----or x gum

1/4 tspnutmeg

1/2 coat flour -(grind the oats)

1 tspbaking soda

1 tspcinncmon (ground)
- THIS IS THE DRY FLOUR MIXTURE

1/2 cbutter or (you can use dairy free

!/2 cshortenng (crisco butter flavor)

2/3 cbrown sugar

!/2 creg, white sugar
-
4 tspgrated orange rind
-
!egg

1/4 capplesauce (may need a bit more)

1 tsppure vanilla extract

3 cgluten -free quick oats , - you can use reg oats...i did.

1 cdried cranberries
- 1.TURN ON OVEN TO 350. GET COOKIE SHEETS READY, LINE WITH PARCHMENT PAPER.
How To Make "cookies for breakfast"

1Mix together flour blend, oat flour,coconut flour,xgum or Guar gum, baking soda,cinnamon. ALL dry ingredients.

2In another bowl,cream butter,shortening and sugars,add orange rind, egg, applesauce, and vanilla. MIX WELL..

3Slowly, stir in dry ingredients. Then stir in oats and cranberries.

4Using a small ice cream scoop, or spoon of your choice..drop cookies on prepared cookie sheet.leaving about 2 inches between each cookie. Place in preheated oven at 350,for about 15 or up to 18 min. according to how large your cookie is.

5COOL AT LEAST ONE MIN..AND MOVE TO WIRE RACK.
