These oatmeal cookies get eaten up before they can cool. If you want a chunky oatmeal cookie, add 1 cup of any of the following: chocolate chips, raisins, chopped walnuts, chopped dates or shredded coconut. The original recipe came on the box of a grocery brand oat box but it has had a lot of "tweeking". Enjoy:)

    brown sugar
  • 1/2 c
    sugar
  • 3/4 c
    vegetable oil
  • 1/4 c
    water
  • 1
    egg
  • 1 tsp
    good vanilla extract
  • 3 c
    rolled oats oatmeal
  • 1 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 5 oz
    chopped dates-optional
  • 1 c
    chopped pecans-optional
  • 1/2 c
    raisins-optional

    Preheat oven to 350 degrees.

    Lightly grease cookie sheets.

    Beat sugars, shortening, water, egg, and vanilla until creamy.

    Combine oats, flour, baking soda, and 1 teaspoon salt if desired.

    Add oat mixture to vegetable oil mix; Add any additional goodies you like. i used 5 oz. chopped dates, 1 cup chopped pecans and 1/2 cup of raisins. Mix well.

    Drop by rounded teaspoons onto prepared cookie sheet(s).

    Bake 12 to 14 minutes or until light golden brown.

    Let stand 1 minute before removing to racks to cool.
