These oatmeal cookies get eaten up before they can cool. If you want a chunky oatmeal cookie, add 1 cup of any of the following: chocolate chips, raisins, chopped walnuts, chopped dates or shredded coconut. The original recipe came on the box of a grocery brand oat box but it has had a lot of "tweeking". Enjoy:)

1 cbrown sugar

1/2 csugar

3/4 cvegetable oil

1/4 cwater

1egg

1 tspgood vanilla extract

3 crolled oats oatmeal

1 call-purpose flour
-
1/2 tspbaking soda

5 ozchopped dates-optional
-
1 cchopped pecans-optional

1/2 craisins-optional

1Preheat oven to 350 degrees.

2Lightly grease cookie sheets.

3Beat sugars, shortening, water, egg, and vanilla until creamy.

4Combine oats, flour, baking soda, and 1 teaspoon salt if desired.

5Add oat mixture to vegetable oil mix; Add any additional goodies you like. i used 5 oz. chopped dates, 1 cup chopped pecans and 1/2 cup of raisins. Mix well.

6Drop by rounded teaspoons onto prepared cookie sheet(s).

7Bake 12 to 14 minutes or until light golden brown.

8Let stand 1 minute before removing to racks to cool.
