connie's carrot cookies

When these cookies are in the oven, your house will smell heavenly!! The original recipe was found on the back of a Duncan Hines carrot cake mix. However, after following their recipe, I made a few tweeks. Makes 5 1/2 dozen. Enjoy!

Ingredients For connie's carrot cookies

1 pkgduncan hines decadent carrot cake mix

1 pkgcarrot & raisins (included in cake mix) & 1/2 cup additional raisins if desired.

2eggs, room temperature

1/2 cbutter, softened
-
1 chot water (used to hydrate carrots and raisins)

1/2 coatmeal
-
1 cchopped nuts (optional, i used walnuts)

1 tspvanilla
-
1/2 cadditional raisins if you prefer
How To Make connie's carrot cookies

1Preheat oven to 350 degrees.

2Hydrate carrot and raisins in 1 cup of hot water. Allow to hydrate at least 5 minutes. Strain before adding to cake mix.

3Beat butter and cake mix, then add eggs (one at a time) and vanilla to batter.

4Add drained raisins and carrots to batter and mix.

5Add nuts and oatmeal to batter and mix.

6Spoon heaping teaspoon of batter onto lightly greased cookie sheets. Wet your fingers and press slightly on top of cookies to flatten.

7Bake for 12 minutes at 350 degrees.

8Remove cookies and cool on wire rack.
